Zombie Wars - Pathfinder style

I've recently stumbled across Kabaneri of the Iron Fortress, and it got me wondering about doing a Pathfinder game using something similar this anime as the background.  As far as I can tell, it's basically a steampunk setting (railroads and steam powered weapons) but swapping it over to regular pathfinder wouldn't be that hard.

The most obvious change needed would be to turn the zombies from mystical in nature to biological, so that Cure/Inflict spells have no effect.  Assuming that I were to put something like this together, I'd want a Co-GM (or someone else to GM), as my record the past few years has been rather questionable.

Anyone have any thoughts on the idea that they'd like to share, as I'm not quite convinced as to making a game of it?

If you want to make them biological, perhaps use the Alchemist class with the Alchemical Zombie discovery and/or the Reanimator archetype as your villains.  With just a little reskinning (as you said), your zombies aren't animated with negative energy, but chemicals, so (given that I am unfamiliar with the anime and just throwing out ideas) can only be destroyed with physical violence or perhaps a countering alchemical reagent?  The "reversing chemical" idea would allow parties to get rid of small groups of zombies with a splash weapon, but not at the kind of en masse way a channel energy could.

I think that if you go that route, maybe toss clerics a free "brew potion" feat or extra skill points, etc, something to account for a featured ability of theirs being less useful.

I'd need a bit of help on the GMing side, as I see the story devolving rather quickly into a series of town by town exterminations.   Mechanically, it's relatively easy to pit a zombie horde against a group of mid-level characters.  The problem that I'd have with running it would be coming up with what to do between the zombie hordes.   Hence the need for either a co-GM or players willing to cough up ideas of their own.

Well, in addition to killing zombies, major aspects of zombie stories often involve looking for supplies, especially food and water, and creating/defending some type of sanctuary.

Haven't checked out the show either so not completely sure how things go but here are other ideas:

Finding the root cause of zompocalypse/cure to zombies
base building
resource management
fighting/recruiting other survivors
finding 'Eden' the mythical place free of zombie plague
       -finding 'Eden' destroyed by the plague or other people
