It helps if you try to keep everything lined up when composing the table, most times. If you've got a row that's going to have several empty lines in it, you can omit those -- when it reaches the end of a cell, it'll just fill in the rest with blanks if you left it out.
On Wednesday's row, leave the 'data' rows unaltered, so that they each get their own cells. That'll make the rest of them behave.
The table didn't know what to do when I got to the Thursday line, because everything else before that had been doubling up. That made it stick to the end, which increased the table width and forced word-wrap on the first column.
