So I have a GM 'character,' and several NPCs that I control. I want to switch the NPC character (name, description and all) to be my primary GM character, and want to move that primary GM character to NPC status. How can I do this without deleting/adding characters?

Go to your Player Management and click the Reorder button. That should let you change your primary character.
