I hope this is the right forum. I wasn't sure which forum to place this in, but this seemed to be the closest fit. I didn't see anything when I perused the FAQ either.

When you view 'The Cast' list in a game it breaks down into categories of GMs, Players, and NPCs. Would it be possible to create our own categories? Instead of having 15 characters in the list of NPCs it'd be nice to break them down into more descriptive categories. Allies and Enemies for example. I've tried to use Tags for this, but when I do, it moves the character from NPC to Player, so that's no help. Being able to create my own categories would be excellent for keeping the characters well organized and easy to find.

Try doing NPC Ally and NPC Enemy as your tags.

You can't create your own categories, but as LoreGuard mentioned; make sure you have "NPC" somewhere in the tag and it'll put them in the NPC section.
