The party is starting out being pulled together and given a mission by the Jedi Council. However, once the job is underway the party is pretty much left to their own devices.

Might be what you are looking for.

Edge of the Empire is actually one of the easiest game I've every played. The dice are also quite simple to use once you start using them. I'd recommend trying the game for a few sessions before making a judgment. If you still find you don't like it, at least you gave it a shot. I just hate to see people discrediting the game over literally nothing.

I've lurked on games and seen it played on youtube videos and such, enough to know that it isn't for me. Too many dice flying around, too many stats, too many numbers to keep track of. Not my style.

I'd be interested in running a Star Wars D6 game. The gritty fringe campaign is one of my favorite styles.

I agree 100%.  I was confused and put off at first when seeing the dice.  After a session actually using them and listening to a actual play podcast, I fell in love with them.  FFG's system is the first tabletop RPG I've played and I'm not sure if I would play another.  Most other systems besides FATE that I've seen are too tactile and mechanical.  I'm confused as the OP said there were too many numbers to keep in mind.  It's so easy to make threats up with on the fly with the simple system.  But to each his own.
