Does this bug you???

In games that I play in.  I tend to try and get a post in response out, as quick as possible.  In doing so, in my hurry I sometimes don't get the grammar and spelling exactly right, (There/their, were/where, here/hear, etc.)  Or some how leave a common short word out of a sentence.  An as much as a day later come back and change a good bit of what I have written because I have thought of better way of explaining something.

So does everybody do this and I just don't notice?

No not everyone does this and you should not post your post until your absolutely sure it is perfect.  So you don't have to make changes that are irritating to everyone.

Or it's no big deal, no one really notices.

Anyone worth playing with has done it and will do it in future. If it bothers you, face to face might be the thing, because on the internet everyone is falliable

Going back and changing "an" to "and" or fixing the "teh" I typed is one thing, changing the wording around is something completely different.

If you're changing minor grammatical errors nobody should mind, but if you're changing content, then you need to be telling the other players when you do it.  This is something you should avoid if people have already posted in response, because the changes you made may change how the other players interpret your character's attitude, intent, whatever.

Yes, I've posted from my phone or late at night, and have made many grammatical errors in my haste.   It's always a good idea to "craft" your post, to make sure it's mostly perfect before posting it.

But Empress is right, if you change your post so that it says something different, or the same thing in a different way, you should let everyone know, or even get the DM's permission first, since many other peoples' posts might be based off what you wrote.
