Oh! a little late but also you can get milk that's been run through a fine filtration system. It's only gently pasteurized, but it seems to last
forever. (The brand name in my area is Natrel.)
I personally find the UHT stuff nasty -- to me it tastes cooked, with eggy undertones. Like Eggy, above, I like un-homogenized whole milk.
But the others are right, homogenization and pasteurization are totally different (one blends the milk so the fat doesn't separate and the other is a sterilization process) and it's generally very hard to get unpasteurized milks unless you are buying direct from farmers who don't mind
being arrested as part of their business.
I don't think most people realize how much disease was spread by milk in the days before pasteurization.
